Dropping the hands

I am very confused about the hand path. My son has been starting his swing with his hands at about shoulder height, for a young guy he stays fairly well connected most of the time.

When we watch videos of pros it seems many start with the hands up high, ear level and drop their hands and often bar the front arm. Is it because they need the extra reach to get to a low and away pitch?

But in an ideal situation, should a batter try to "maintain the box" and keep the hands chest high and front wrist loose in order to adjust the height of bat head?
