If your girls are hitting well, you have a lot to be proud of. As far as consistency, even major leaguers go through slumps some of which are prolonged. Consistency comes with repetition over time.

As for the videos, see Teaching Mechanics of the Major League Swing II. Also see Charlie Lau's Art of hitting .300. Also on ESPN watch the women's softball games and tape the games. Especially pay attention to the number 3 and 4 hitters. Usually those hitters have pretty solid mechanics.
