Barrel above the hands

How come we teach opposite of what Major Leaguers do? Coaches always say keep the barrel above the hands but from the video I've looked at of top hitters. I'm yet to see anyone with their barrel above the hands or even with the hands at contact. The barrel is always slightly below the hands so how come I've never heard a coach say keep your barrel below the hands?
