Our kids are making the transition from coach pitch to kid pitch this year. They hit really well against the coach, but as soon as a kid takes the mound they all either just stand there and strike out or swing wildly. They hit great again once the coach takes the mound. How can we help them make the transition? Any drills or suggestions?

If they hit well against the coach, then it is mostly a matter of getting used to hitting against kids. Mostly, they need lots of at-bats to settle down and realize that its the same ball they are hitting.
Some things that could help:
Mentally, you can tell them to focus on the ball and ignore who is pitching.
Coaches are grownups and aim well, and wouldn't hurt a kid, etc. Kids don't trust other kids to aim well, so they may be thinking partly about getting hit. Its part of becoming a ball player. Teach them how to get hit by a pitch (turn back and away, practice with tennis balls and hit them with tennis ball pitches).
Bunting is a good way to get used to seeing the ball, and getting it into play. Maybe after a bunt or two, they will start swinging to hit as well.
