Lately my 11yo son has gone between hitting the ball hard and popping up. He seems to be collapsed, almost sitting on his back ankle with his back foot almost flat on the ground(not up on his toe as he was last summer)

I see that often. HE could be reverse pivoting. Thats loading the front side pre-launch and actually launching the bat off the rear foot. It can be confusing to discuss because the weight starts back in the waiting position , centers at launch by tensing the front inner thigh, and returns to the rear inside thigh at contact and release.

The center of gravity and its' shifting is hard for kids at times. Their is a flow of movement in the swing that is present but hard to perceive in the untrained eye.

There are many things that could contribute from posture, strength, bat position and the lower /upper body connection ...so I think I would get someone to do an analysis via tape. OR Don't put a bandaid on it or let the next door neighbor take a shot. At his age invest in some education for yourself so you can monitor his progress as he matures
